November Birthdays – Hedgehogs!

Dear Friends,
It always astounds me how fast the holidays sneak up on me each year! Thanksgiving is just a couple weeks away and all I can think about is pie! In order to prepare for the big day, we decided to incorporate our top three pie flavors in this month’s treats: pumpkin, apple, and cranberry. This month’s theme was hedgehogs. Yes, you read me correctly. This certainly wasn’t the most professional theme we’ve ever used, but it was the most fun. I was simply unable to resist these little woodland critters from Paper Source.

• Pumpkin Spice Whoopie Pies with Cream Cheese Filling
• Glazed Apple Crumble Pie Bars
• Cranberry Swirl Bread with Crumb Topping

Pumpkin Spice Whoopie Pie 1

Pumpkin Spice Whoopie Pies. This is a classic recipe that we look forward to each year. These tiny, lightly-spiced pumpkin cakes practically scream to be filled with cream cheese icing. We tried to replicate the spines of the hedgehog with a ring of mini chocolate chips.

Glazed Apple Crumb Pie Bar 1

Glazed Apple Crumble Pie Bars. It took just one bite to decide to add it to our permanent collection. The best way to describe this dessert is as a sliceable piece of apple crisp. The apples bubble happily in the oven and then perfectly congeal as they cool, creating a thick layer of tart fruit. And, the crust is chewy, sweet – blissful. I really can’t say enough about these treats!

Cranberry Swirl Bread 1

Cranberry Swirl Bread. As great as the apple bars were, we received more rave reviews on the cranberry bread. It was a toss-up, though, as to the best feedback. In the running was the comment that we should abandon all our other dessert efforts and focus on creating “” and the statement from a dignified, but unnamed source, that dignity is overrated and you should cave and eat another piece.

This bread looks and tastes special with the bright red cranberries cooked into a sauce and swirled throughout the soft, sweet loaf. We think this treat makes a wonderful addition to our holiday menu.

Finally, we just wanted to say how thankful we are to be able to do what we do. We really consider it a privilege to learn and create and ultimately make things that people like! We hope you and your family have a wonderful Thanksgiving!
